Migrate public_system, redis, and elasticsearch volumes from NFS network mounts to local host bind mounts under /var/mnt/volume1/Docker/Mastodon_pmo/. Update the Sidekiq healthcheck command to remove the hardcoded version number from the process grep pattern.
